fiber optic wiring? most people at least have the decency to stick a gun in your back before they rob you. i assure you that your stock wiring harness is plain old copper or aluminum wire. so are at least 99.99999% of all aftermarket head units.
i'm not sure about the steering wheel controls, but i'm pretty sure you can buy an aftermarket module to retain it's use on the new head unit.
I just installed a Jensen VM9022 head unit in my '06 eclipse GT last night. 6.5" touchscreen, built in ipod control, built in bluetooth. sat ready (i think you need another box for sat tuning though) and you can pick up the jensen nav101 for about $200 new in box on ebay for integrated turn by turn nav on the screen.
i got a really good deal on mine due to a shipping error, but i think you can find one for about $450 +$200 for nav. www.onlinecarstereo.com is a pretty good place to check.
i kept my stock speakers, and it sounds great. built in EQ as well. i'll try to post some pics as soon as i get some taken. you'll just need a dash kit from crutchfield (about $25, and it looks factory) and the wire harness will save you a TON of trouble in figuring out what wires go where (the colors on the head unit won't match the factory harness). once you get the harness (also from crutchfield, about $15) spliced into the head unit, it just plugs right into your factory connector. easy as hell. i did the whole install after work last night in about 90 minutes.
you'll need a small flat head screwdriver to pop the vents out of the dash trim, a #2 phillips to remove the head unit, wire cutters and strippers, and a couple 16-22 gauge wire nuts or splice connectors, and some electrical tape. all the dash pieces are held in with plastic clips, and they just pop right off. just gently pull on the edges, or carefully pry with a small flat head to get them loose. then find the release tab on the wire harnesses to remove them. once you get it all apart, it's actually very easy to install.
adding GPS, or rear view camera will be a little more difficult since you have to route the wiring all the way from the back of the car. but as far as the basic head unit install, i would reccommend doing it yourself if you have some basic mechanical skills and tools. plus crutchfield will send you a pretty nice install sheet for any kits you buy from them.
