I have an 07 spyder GT V6 and I usually get around 23 mpg with city and highway combined, which isn't terrible for this powerful of a car. Are there any modifications to the engine, which aren't too expensive to increase MPG without sacrificing power??? Will a cold air intake etc do this??

Cold Air Intake will help but not much and not really noticable.

You won't get more than what the vehicle is rated. That rating is under best conditions and professional driving.
