I'm inclined to go after the water pump as the culprit, but that's an expensive fix and I just can't see why the water pump would work fine with the A/C off but not with it on. Any ideas???

Might be a bad condenser and it's having to work harder to make the air cold. Therefore it would be taking more power from your accessory belt, hence making your engine work harder.
Just a guess but it's just logical thinking, but then again when are Mitsubishi's logical?
